Fatty acid profile in meal obtained from biological silage of the viscera of the scallop (Argopecten purpuratus)

Abstract

 Aquaculture by-products represent a potential source of nutrients for the formulation of diets for aquatic organisms. The objective of this study was to determine the fatty acid profile in meal obtained from biological silage of scallop (Argopecten purpuratus) viscera. Fresh soft residues (digestive gland, gills y mantle) were washed, ground, and mixed with 5% molasses and 10% Lactobacillus bulgaricus, then incubated at 40 °C for 48 h. The fatty acid profile was determined by gas chromatography. Polyunsaturated fatty acids were the most abundant (43.83%), followed by saturated fatty acids (33.07%) and monounsaturated fatty acids (23.10%). Eicosapentaenoic acid (EPA) showed the highest proportion (19.51%), followed by linoleic acid (12.76%), docosahexaenoic acid (DHA; 9.56%), and linolenic acid (2.00%). The EPA/DHA ratio was 2.04. A higher proportion of n-3 fatty acids (31.07%) was observed compared to n-6 fatty acids (12.76%). The fatty acid profile of the meal obtained from biological silage of scallop viscera represents a nutritional resource of interest for inclusion in diets of aquatic species.
